Thai Curry Potsticker Soup

  • 1 package of OMNI Potstickers

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 onion, diced

  • 1 red bell pepper, diced

  • 1 sweet potato, peeled and cubed

  • 2 tbsp red curry paste

  • 1 can unsweetened coconut milk

  • 2 cups vegetable stock

  • 1 cup fresh spinach

  • Juice of 1 lime


  • In a large stockpot or Dutch oven over medium- high heat, add in oil, garlic, onion, red bell pepper and sweet potato. Stirring occasionally for about 3 to 4 minutes.
  • Stir in the curry paste and cook for an additional minute. Add the coconut milk and vegetable broth.
  • Bring to a boil, add Omni Potstickers then reduce heat to a simmer for 6 to 8 minutes.
  • Add the spinach then lime juice. Stir until the spinach is wilted. Serve immediately.
