Crispy OMNI Golden Fillet Sandwich

Cooking time




  • OMNI Golden Fillet, 1 Pack

  • Olive Oil, as appropriate

  • Leek (large), 1

  • Tomato (sliced), 1

  • Lettuce (leaves removed and washed), 1

  • Baguette (or other bread), 1

  • Sauce
  • Leek (trimmed, cleaned and sliced thin), 1

  • Olive Oil, 1 Tbsp

  • Lemon (juice and zest)

  • Capers, 1 Tbsp

  • Grain Mustard, 2 Tsp

  • Vegan Mayo, 2 Tbsp


  • Heat olive oil over medium heat. Sauté leaks and continue cooking until well caramelized. This will take several minutes. Once cooked, transfer to a lined baking sheet and place in the freezer to cool.
  • Place all aioli ingredients into the working bowl of a small food processor or blender. When the leeks have cooled, add to the aioli mixture and pulse until it reaches your desired consistency.
  • Spread on toasted roll, top with tomato, lettuce and OMNI Golden Fillets then enjoy!
